The Middle Path

This is the soul of Manderley. If woken up into a nightmare where only a single choice remains, we choose this.

Tieguanyin, beautifully translating to iron goddess of mercy, is a familiar variety of oolong. Yet this emerald green form is one to be sought out, humbly mastering subtlety. It’s April and May. Lilacs and jungle. Grass veiled in dawn’s crisp dew. The murmuring thaw of an early spring creek. Immaculate.

Steep then let it cool slightly. Sip through the front teeth while drawing in a whisper of air to reach nirvana.

Serving Suggestion: start with 3-4 grams or 1 teaspoon in 8-10 ounces of water at 195-205 degrees Fahrenheit then steep for 4 minutes.

Manderley’s Secret Suggestion: using a ratio of 3 grams for every 8 ounces of water, let the tea leaves steep in room temperature or cold water for 24-48 hours. This gradual steep while avoiding high heat allows the more delicate notes to linger. This method may yield to higher caffeine levels.
